mexican pasta.

rachel's mexican pasta

what y'all will need:
3 cups uncooked rotini noodles
2 jars {16 oz} your fav salsa
2 cups shredded cheddar cheese <--i use a mexican blend
1 cup sour cream OR cottage cheese
1 can {16 oz} black beans <--i use bush's
1 can {16oz} drained whole kernel corn
1/4 cup fresh cilantro

the making part:
cook rotini according to package. drain.

mix rotini, salsa, 1 cup of cheese, sour cream, beans, corn & cilantro.

spray 9x13 casserole dish with cooking spray.
spoon the above yum yum mix into pan.
top with remaining cheese.

bake 375' for 20 minutes.

hork it down.

the only downfall is it's meatless.
this is a big deal in the griffith house.
my hubby is a meat & potatoes kind of guy.
feel free to add taco meat to the mix before baking.
{1 lb ground beef cooked, drained. add taco seasoning.}
- fyi: shredded chicken would work just as well -

this is THE perfect meal when you don't feel like cooking.
OR if you've been quilting all day. <--ask me how i know this. HA.

This looks so good, and easy! Reminds me of my "Pizza Pasta" aka cavatini. Pasta with pizza toppings of your choice. Can't go wrong with noodles and such. :)

Guess what I made for dinner? We all loved the mexican pasta. I (mostly) followed your directions, but had some pico de gallo that was approaching its date, so I mixed that with the salsa. Also added black olives.

Hey, Rachel, sending along another thanks for the win of the Quilt Software. When I saw that there were 386 entries, I was so glad my name/number came up the winning entry! I've made a recipe almost like this one and added the taco meat but also, instead of the beans, I add black olives. It works for us although some folks don't like them so I have learned not to make that version for potlucks. :-) Happy Day to you!

I made the casserole for dinner tonight! Everyine loved it! I put in meat and onions. May add green pepper next time too. So flavorful and made a huge pan full. Thanks for sharing such a quick easy recipe. :-)

Thank you for an AWESOME recipe! I used a bit less cheese & sour cream (both fat-free) to make it more diet friendly, but it still tasted amazing. Just hubby & I eating it...made enough leftovers for 3 lunches! I will definitely be making this one again!
