rachel's cheesy corn chowder.

what y'all will need:
3 cups milk
2 cans cream corn OR 1 can cream of chicken soup
2 cans whole kernel corn, drained
2 cans new potatoes, coarsley chopped
1 lb. smoked sausage, sliced
2 cups sharp shredded cheese
2 tbl. parsley
salt
pepper

the making part:
mix milk, corn, potatoes & smoked sausage together in a stock pot.
warm thoroughly over medium-high heat.

remove from heat.
add shredded cheese & parsley.
once the cheese is completely melted, add salt & pepper to taste.
{the cheese will thicken your chowder.}

trust me that it's yum. yum. yum.
:O)

note: using grilled corn on the cob instead of whole kernel corn is amazing.
just sayin'.

oh & if you're the brave type...
add some crushed red pepper flakes or some of your fav hot sauce.
it kicks it up a notch.

Hooooo wow, that looks so yummy, but it's 97 or so here.......can you eat it cold??? hahaha!
Just kidding, but I will add your recipe to the top of my soup section so as soon as it cools off, we can make it......LOVE chowders with potatoes and corn. For myself I'm subbing in ham. I am not a sausage fan (it only goes on pizza,lol). But the rest of my family does so I will serve it as you have it for them.

yes, you drain the whole kernel corn.
i'll go add that in.
not sure how i forgot to say that. lol.

Mmmmmm, that looks great! I agree that it's a little too hot for it right now, but I will definitely hang on to the recipe for cooler weather - I love love love corn chowder!!

Maybe I'm just not that smart lol but those new potatoes... did you buy them in the can? or do you chop your own potatoes and use the can as your measuring cup...

I made this for dinner tonight Rachel. It turned out AWESOME! I made a few little tweaks to mine (I used 1% Milk & Turkey Smoked Sausage, 1 large fresh potato instead of canned & added 1 bottle of Amber Ale beer). Again, it turned out AWESOME! Thank You again for sharing this great recipe.

I made this last night. Used half and half instead of milk but otherwise didn't change the recipe a bit. My DH has declared it the best soup ever! Mighty good.

Hi..I made your soup on the weekend...was a big hit and so simple...used fresh potatoe -cooked in microwave then chopped...chirizo sausage and a chicken breat fillet - chopped into small pieces and cooked before adding to soup and corn mix...was absolutely delicous...I am going on a girls weekend away and am going to make some to take with me for lunch...mmmm yum yum
